I hinted in this post and on Instagram that we’re moving! I haven’t shared the details yet (coming soon) but most likely by the time you are reading this we will have already moved…which is crazy. Things happened really quickly and for a multitude of reasons but we’re still very excited about our next chapter in _____ –> I’ll leave you guessing 😉
One thing that comes with moving is the big purge. I love getting rid of things and finding new homes for various stuff that we’ve outgrown or no longer have a use for. We’ve only been in our house for 8 months so thankfully we haven’t accumulated that much but we’re being much more discriminatory this time around.
In general, we’re pretty good about not accumulating “stuff” (besides clean beauty eek!) and a lot of that has to do with my rules with purchasing. I’ve learned enough times to not get suckered into being something trendy that I’ll get over in a few months and when we travel I only buy food or bodycare products I can use. This is a double-edged sword as I feel a deep sadness whenever I finish a product and know I can no longer replace it but there’s nothing I love more than getting a ton of use out of something.
So while I’m sad we just finished off our jar of lavender honey from New Zealand and my body butter from British Columbia, it is certainly making it a lot easier to decide what to move with us!
Clearly this has nothing to do with this pad see ew recipe. It’s just simply what’s been on my mind lately. And since moving is taking over our life, we’ve been all about these 30 minute meals like chicken pad see ew. This has by faaaaar been our #1 most consumed meal this year. It’s about time I shared it with you!
What Is Pad See Ew?
Pad see ew is a traditional Thai stir fried noodle dish made with rice noodles and generally some combination of veggies and meat. Pad See Ew actually means “stir fried soy sauce noodles” and that’s pretty much what the recipe is plus a few other traditional ingredients. This recipe is my variation on the traditional based on what I have access to from my local grocery stores.
What You Need:
rice noodles – traditionally uses thick-cut noodles (Sen Yai) but see substitution note below.
sesame oil
chicken – boneless, skinless chicken breast
garlic
baby broccoli – Chinese broccoli or regular broccoli works well too
bell pepper
jalapeno pepper – optional
soy sauce
oyster sauce
fish sauce
honey – or maple syrup
eggs
optional: green onion + cilantro, for serving
Some Substitutions
Rice Noodles – Traditionally pad see ew is made with thick cut rice noodles also called Sen Yai. You can find these at most Asian grocery stores and can also order on Amazon, however I try to shop as local as possible and unfortunately there’s no Asian grocery store near us (right now). Feel free to replace the thick-cut rice noodles with normal thin-cut noodles.
Chinese Broccoli – Again, this is available at most Asian grocery stores but if you don’t have access to one I recommend baby broccoli (sometimes called broccolini) as a great replacement. Alternatively you can also use regular broccoli. I’m a big believer in using what you have access to.
Soy Sauce – Traditional pad see ew typically uses a combination of light and dark soy sauce which help to balance out sweetness. Feel free to just use regular soy sauce from the grocery store. Not the most authentic, but it works. I also like to use honey to balance the sweetness. If you are gluten-free tamari makes a great replacement.
Oyster Sauce – This can be hard to come by in most places so feel free to substitute with an additional tablespoon of fish sauce and add a teaspoon of additional honey.
Get creative! Cooking is meant to be fun. Don’t be afraid to experiment.
How to Make Pad See Ew
STEP 1: Make noodles according to package instructions. Set aside once done cooking.
STEP 2: While noodles are cooking add sesame oil to a large pot or wok and heat over medium heat. Add 1 garlic clove and quickly stir fry for 30 seconds. Add your chicken, sprinkle with salt + pepper and flip occasionally until all sides have turned from pink to white (1-2 minutes).
STEP 3: Add in your remaining garlic, baby broccoli, bell pepper and jalapeno and stir to combine well with chicken. Place a top on your pot or wok and let veggies steam for 2 minutes. Remove top and continue cooking until all veggies are cooked through – around 3-5 minutes.
STEP 4: While veggies are cooking combine soy sauce, oyster sauce, fish sauce and honey in a medium bowl. Set aside.
STEP 5: Push veggies and chicken to one side of pot or wok and crack eggs directly into the wok. Scramble immediately using a spatula. Once cooked combine with veggies and chicken.
STEP 6: Add rice noodles to dish and top with sauce. Cook for about 2 minutes or until everything is well coated. Top with green onion and cilantro, if desired and serve hot.
Storing Leftovers
You can store your chicken pad see ew leftovers in the fridge for up to 3 days. I personally wouldn’t recommend meal-prepping this as I find it tastes best fresh but if you do have any leftover you’ll want to either heat it up in the microwave or add back to to a pot or wok on the stove-top with a few splashes of water. The noodles will harden in the fridge but with heat will loosen up.

8 oz rice noodles (thin or thick depending on what you can find)
2 tbsp sesame oil
1 lbs boneless, skinless chicken breast, cut into thin slices
4 garlic cloves, minced
1 head of baby broccoli or regular broccoli (destemmed + chopped into florets)
1 red bell pepper, seeded + sliced
1 jalapeno pepper, seeded + chopped (optional)
1/3 cup soy sauce or tamari
1 tbsp oyster sauce
1 tbsp fish sauce
1 tbsp honey (or maple syrup)
2 large eggs
optional: green onion + cilantro, for serving
